What has happened to my tastes since I’m an adult? They are so different than when I was a kid. As a child, I never would have liked shrimp and corn chowder (or any kind of chowder, for that matter.) But this recipe from Real Simple is one of my all-time favorites. Like many of their recipes, it’s also very easy.
I’ve made (and blogged about) this recipe before (since we made it for the soup scrapbook) but I thought I’d post it again in case you’re looking for an easy soup recipe that tastes like you spent all day on it.
First, the ingredients… a selection of stuff I really like. Fennel just makes any dish, doesn’t it? The surprising one in this dish the clam juice. You’d think it would be gross, but it’s not. It helps bring this soup to “the next level” as people always say.
I like to cut the recommended whole milk in half, and use half skim, half whole milk. I also like to eat it as is but the family likes it with bread.
