I’m obsessed with almond butter lately. Why, I have no idea. I like peanut butter and use it in baking and cooking a lot, and I guess I just wanted to try almond butter. I picked up a jar at Wal-mart and have been using it here and there in places where I usually use peanut butter. It’s really good.
I experimented with a couple good cookie recipes, and found this one at Good Life Eats which I really liked.
First, take all the ingredients. Nothing too unusual here on that front. Mix everything up and roll the dough into balls. Put on a cookie sheet. Flatten with a fork, just as you would for peanut butter cookies.
I found they are little bit more crispy if you bake them just a bit longer, so they look a deeper brownish tan. After baking, place on a rack to cool.
And serve! They were a hit in our house, even with the folks that didn’t love nuts. Also, this recipe makes tons. You might even want to cut it in half the first time you make it to be sure you like it. They have a nice flavor to them, so give them a try and let me know how you like them.
