I tend to do a lot of homemade gifts at Christmas, and one of the things I’ll be doing this year is giving out some of my homemade Mexican spice mixture. I can write this here because, as you guessed, no one on my Christmas list reads this blog! LOL
I came up with this mix after talking to my pal Michelle. She makes such great meals, and one day she mentioned making those big burritos like they serve at Chipotle. She uses a Mexican spice rub on her chicken, and when I tried to look for it, I could not for the life of me, find it anywhere. So I decided to make my own version instead. What follows is the spice mixture, and then my recipe for the burritos.
Mexican Spice Mixture
Mix up a batch of this and place it in a glass spice jar.
1 T. Chili Powder
1 T. Cumin
1 T. Oregano
1 1/2 T. Cocoa
2 T. Flour
Add 2 T. of this mixture along with four chicken breasts to a crockpot. Add half a jar of salsa, and a cup and a half of water. Cook on high for 4 hours. Remove and dice chicken.
To make that great rice that is always in a Chipotle burrito, I do this:
Mexican Burrito Rice
2 c. white rice (cooked)
1 t. dried cilantro (or 2 T. fresh)
Juice from one lime
1/2 can black beans
1/2 c. corn
1/2 t. salt
To make the burritos, I use a soft tortilla shell, add the chicken, rice mixture, and a dab of salsa. I also add a dab (1-2 teaspoons) of sour cream. The burritos are very filling and have a nice flavor with the lime, spice mix, and black beans.
I plan to give away a small jar or two of the Mexican spice to some folks on my Christmas list, along with the recipe so they can recreate it themselves if they’d like. But I guess you could say I’m giving it to you first!
