I love cooking (as I think you know if you’re a regular reader here) and came across this great recipe from Martha Stewart for fries that are baked in the oven. The recipe is not only easy to make, but requires just a few simple ingredients. It’s pretty amazing how well these come out from basically just olive oil, potatoes, and salt and pepper.
Usually a make this with Idaho potatoes, but this time I had Yukon Gold and decided to use those instead. I also usually peal the potatoes, but left the skins on this time and they were just as good.
First, cut the potatoes in half, and then in thirds.
And then slice up into French fry sized pieces.
The recipe uses simple ingredients you probably already have at home: Kosher salt, pepper, and olive oil. (And yes, I do buy my pepper at Walmart.)
Toss the potatoes and remaining ingredients in a bowl.
I use aluminum foil for everything, so I put that down on a baking sheet and cover it with cooking spray. The fries don’t stick that way.
Toss to coat….
… and bake. Make sure they are all on one layer.
We like them cooked longer (40 min) than normal so they get slightly crunchy on the outside and chewy on the inside. If you don’t like them that way you can always cook them according to the recipe (20-30 min). I serve them with Dijon mustard.
I love these- we make them this way too! They are soooo yummy!! My hubby crumples up the foil first and then lays it back out- he swears the crumply texture makes them cook better 🙂 Now I want fries!!! 🙂
